Recipe - Mexican Ham And Egg Bake

Ingredients:

6 Eggs
One fourth cup All purpose flour
One half teaspoon Baking powder
One half teaspoon Salt
One fourth pound Canned green chilies; minced ,
(wear rubber gloves)
1 cup Cottage cheese
One half pound Monterey Jack cheese;
shredded
2 teaspoon Unsalted butter
1 One half pound Cooked ham; cut into 3/4
inch slices
1 One half cup Salsa

Prep: 10 min, Cook: 30 min. Preheat oven to 375øF. Whisk eggs in a mixing
bowl. Add flour, baking powder and salt and mix thoroughly. Stir in next 3
ingredients. Transfer to a buttered 9 inch baking dish. Bake 3035 minutes
or until center is just set. Let stand 5 minutes before cutting into
squares. Melt butter in a heavy nonstick skillet over medium heat. Saut‚
ham 23 minutes per side until browned. Transfer to a platter and keep warm
until ready to serve with eggs and salsa.

This recipe serves 8 people. Because this recipe is for a particular size
pan, it adjusts the number of servings only in multiples of 8.
