Recipe - Mexican Dreams

Categories: Cookies, Favorites, Food Gifts, Holidays, 1, Mexican Dreams
Ingredients:

1 pound Butter, NO margarine!!
1 cup Powdered sugar
4 cup Flour, sifted
2 cup Pecans, chopped, NO sub!
2 teaspoon Vanilla extract
Powdered sugar, extra for
rolling

NOTE With the onset of the Holiday season, I thought I'd post a recipe for
cookies that my Grandfather had made for as long as I can remember (it just
wouldn't be Christmas without them.). This is the recipe that I got from
him, though I have no idea where he got it. I have made them for the last
six years and have gotten many requests for the recipe. A word of caution,
however, you can never eat just one. :) Enjoy!! Michelle COOKIES Mix
according to butter cream method. Mold into balls. Chill. Bake on ungreased
pan 35 minutes at 325*. Roll in powdered sugar while still warm. NOTE
Molly, Hi!! I'm sorry about the confusion on the recipe. "mix according to
butter cream method" (I had to ask my Grandfather when I first read that
several years ago) means to cream the butter and sugar together first
....add vanilla....then dry ingredients. You will need additional powdered
sugar in which to roll the cookies. Another note is that you don't want the
cookies to be too large....about 1" in diameter. Of course you'll have to
sample a few along the way....quality control, you know...LOL Just be
careful, otherwise you'll end up eating may too many (I'm speaking from
personal experience !! LOL) I know that you'll love these....they are
always the first to go and there are NEVER enough to go around. I've always
added them to my holiday baskets and have even been told by friends and
family that I didn't put enough in each basket...(I'm always amazed,
considering I usually put about 2 dozen ) LOL I'll pass the hugs on to my
Grandfather...I'm sure it will make him smile. :) I hope that this helps to
clarify things. :) Michelle {{}}
