Recipe - Mexican Corn Relish (Aicr)

1 Diced onion; white
1 tablespoon Canola oil
2 cup Corn kernels
1 Red bell pepper; minced
1/3 cup Poblano; minced
2 tablespoon Chopped cilantro
1 tablespoon Fresh lime juice
One half teaspoon Salt
Saute the onion in the oil, stirring occasionally. Add corn and cook until
tender, 3 to 5 minutes, then transfer to a mediumsize bowl. Add remaining
ingredients. Mix well and serve at room temperature.
PANTRY: substitute green bell pepper for poblano chili;; white wine
vinegar for fresh lime juice.
