Recipe - Mess O Greens

2 tablespoon Olive oil
5 md Leeks, white and light
green parts only; cut into
rounds
2 Cloves garlic; peeled
1 teaspoon Red pepper flakes
1 md Smoked turkey wing; cut
into 3" pieces
3 pound Greens; wash, trim, torn
One fourth cup Dry white wine
Salt and pepper
Heat olive oil in a large stockpot or casserole over mediumhigh heat until
hot, 2 to 3 minutes. Add leeks and garlic, stir to coat. Cook, stirring,
until leeks are softened but not brown, about 3 minutes. Add red pepper
flakes, turkey wing and greens; if necessary add greens in a few batches.
Add wine, cover. Steam greens, turning occassionally, 8 to 10 minutes.
Uncover and add Three fourths teaspoon salt and One fourth teaspoon pepper and cook, tossing
occassionally, 3 minutes more. Discard turkey and garlic and serve.
