Recipe - Merry Meringue Christmas Cookies

2 Egg whites; at room temp
1/8 teaspoon Salt
1/8 teaspoon Cream of tartar
Three fourths cup Sugar
One half teaspoon Vanilla extract
1 cup Semisweet chocolate chips
1 cup Chopped nuts
3 tablespoon Crushed peppermint candy
Preheat oven to 250 degrees. Lightly grase two or more baking sheets. Using
an electric mixer, beat the egg whites in a med bowl until foamy. Add the
salt and cream of tartar and continue beating until soft peaks form. Add
the sugar, 1 tbsp at a time, beating well after each addition. Continue
beating until the meringue is stiff. Fold in the vanilla extract, chocolate
chips, nuts and candy. Drop by tspful One half inch apart, onto the prepared
baking sheet. Bake 40 mins. Remove to a cake rack to cool. May be prepared
ahead and frozen. Makes 5 dozen Note these are as pretty as they sound!
