Recipe - Mega Muffin Sandwich

1 English muffin (or two
slices whole grain bread
for sodium watchers)
1 sl Canadian bacon
Vegetable cooking spray (one
3second spray)
One fourth cup Egg substitute, thawed
1 ounce Shredded light cheddar
cheese
Toast muffin. Warm Canadian bacon in microwave for 10 seconds. Spray
nonstick skillet with vegetable cooking spray, then scramble the egg
substitute. Place bacon on bottom half of muffin. Top with egg and shredded
cheese. Broil just until cheese melts (less than 1 minute). Top with other
English muffin half. Serve warm. Yield:Makes 1 Serving
Per Serving: 282 Cal; 8 g Fat; 23 g Protein; 28 g Carbohydrate; 948 mg
Sodium; 33 mg Cholesterol. Dietary Exchanges:2 Bread; 2 Meat.
