1 pound Ground beef
1 cup Fresh bread crumbs 2
Slices
Three fourths cup Picante sauce
One fourth cup Onion minced
2 tablespoon Parsley minced
1 Egg
1 teaspoon Salt
2 teaspoon Ground cumin
15 ounce Tomato sauce
One half pound Velvetta cubed
1 One half teaspoon Chili powder
1 teaspoon Ground coriander
1 pound Angel hair pasta; cooked
Drained hot
1/3 cup Fresh cilantro chopped

Picante sauce additional
Combine beef, bread crumbs, One fourth cup picante sauce, onion, parsley, egg,
salt and One half tsp cumin; mix well. Shape into 1" balls. Place meatballs on
15x10" jellyroll pan. Bake at 350~ for 15 minutes. Drain off fat. Combine
tomato sauce, remaining One half cup picante sauce, velvetta, chili powder,
remaining cumin and coriander in a large saucepan. Cook over low heat,
stirring frequently until cheese is melted. Add meatballs; simmer until
heated through. Spoon over pasta; sprinkle with cilantro, if desired. Serve
with additional picante sauce.
