2 One half pound Potatoes; Peeled
1 tablespoon Olive Oil
2 One half lb. Minced Steak or
Pork; (Lean Hamburger or
Pork Sausage or half of
each) (up to 2)
One half White or Yellow Onion;
Peeled and Finely Chopped
1 Clove Garlic; Finely Chopped
2 Or 3 Springs Fresh Basil;
Finely Chopped
One half tablespoon Worcestershire Sauce
6 tablespoon Sweet French Mustard
Salt and Freshly Ground
Black Pepper to Taste
3 ounce Fine Bread Crumbs
2 ounce Almonds; Finely Ground
2 ounce Cheddar Cheese; Cut into
Small Cubes
4 lg Eggs; Well Beaten, (up to 6)
Father's Day has become a day to honor not only your father, but all men
who have acted as father figures to you. Stepfathers, uncles, grandfathers,
and adult male friends are all honored on Father's Day.
Several years ago there was a relatively successful publication about the
supposed desire of "real men" to avoid quiche. The Cook And Kitchen Staff
want you to know that many men eat quiche they just won't tell you how
much they enjoy it.
Today's recipe is in honor of quicheeating Fathers and fatherfigures
everywhere, because any meal prepared by a son or daughter for their Father
or fatherfigure on Father's Day is a great way to say, "Thanks for having
a positive influence in my life" and "I'm glad you've been there for me
when I needed you the most." Now, let them eat quiche!
In lightly salted water, cook the potatoes by boiling for 20 minutes. When
they are cool enough to handle, slice and reserve.
In a large skillet, warm olive oil over medium heat. Brown minced meat,
onion, garlic, and basil for 8 to 15 minutes until wellcooked and broken
down into small bits of meat. Drain if necessary. Return browned meat to
the skillet and add Worcestershire sauce, mustard, and salt and pepper to
taste. Stir to blend and keep the meat sauce warm over low heat.
Preheat oven to 375F degrees. Sprinkle bread crumbs evenly over the bottom
of a single 9 by 13inch or two 8inch round baking pans. Spoon the meat
filling over the top of the bread crumbs. Place potato slices and cheese
cubes over the meat. Pour wellbeaten eggs (or an egg substitute) over the
meat, potato, and cheese layers, and sprinkle cut or sliced up almonds on the top.
Bake for 30 to 40 minutes until the center of the quiche is solid.
Serve warm with a green salad.
Kitchen Staff Tips: The quantity of eggs used to prepare this recipe can
vary greatly, depending on the size of the eggs and the baking pan or pans
used to bake the quiche.
Any way you prepare it, just make sure the eggs cover the top of the meat
in a thin layer. If your Dad is watching his cholesterol, this recipe is
great for utilizing an egg substitute!
