Recipe - Meat Loaf Rings

1 pound Lean ground beef
Three fourths teaspoon Salt
1 Beaten egg
One fourth teaspoon Pepper
6 Crushed soda crackers; or
One fourth cup dried bread crumbs
1 Cloved minced garlic
One fourth cup Chopped green pepper
1 small Minced onion
One fourth cup Chopped celery
1 tablespoon Minced parsley
One half cup Tomato juice
One fourth cup Catsup
Thoroughly combine all ingredients except catsup. Pack lightly into 9 inch
glass cake dish, making a well in the center and placing an empty glass
right side up in the center of the dish. Cook uncovered 6 minutes, rotating
One fourth turn half way through cooking time. Drizzle catsup over top and cook 5
minutes longer, rotating One fourth turn half way through cooking time and let
stand 5 minutes. Remove glass and spoon off drippings.
