Recipe - Mckenzie Mushrooms

Ingredients:

2 Hard boiled eggs
2 Rashers bacon
1 tablespoon Mayonnaise
3 tablespoon Chopped coriander
1 tablespoon Desiccated coconut
1 tablespoon Curry powder
8 lg Flat mushrooms
2 tablespoon Butter
2 tablespoon Oil
One half teaspoon Salt
Freshly ground black pepper

Shell eggs. Place in a shallow bowl and mash.

In a frying pan, cook bacon until crisp and chop finely.

Add to egg with mayonnaise, coriander, coconut and curry powder. Combine
well.

Place mushrooms in a baking pan and cut off stalks. Divide egg mixture
between mushrooms pressing to cover all of mushroom gills.

Melt butter and oil together. Pour over mushrooms. Sprinkle with salt and
pepper.

Bake at 180 degrees C for 15 minutes or until mushrooms are cooked through.
