Recipe - Matzo Brie (Fried Matzo)

FOR EACH PERSON USE
1 Matzo
1 md Egg
1 teaspoon Brown Sugar
1 Shake of Cinnamon
We're offering a sampling of Passover Preparations for the next week before
we move onto a few Pasta Greats through the end of this month. You don't
have to be Jewish to appreciate the Matzo as much ingenuity has been
applied to many of the recipes we'll offer during our Passover
Preparations, as leavened products are strictly forbidden.
Simply defined, leavened items are foods that count on yeast as an active
agent to help the dough or batter to rise. Breakfast, lunch or dinner,
leavened products are not allowed during Passover. Try this pancakelike
recipe for breakfast today or during Passover the 10th through the 18th,
and you'll have a new opinion of Matzo when your plate is cleared.
Break matzos in a large bowl, pour hot water over to cover. After about
5minutes, pour the remaining water off and squeeze surplus water out. Add
an egg and mix well. Melt a little butter or margarine in a frying pan, add
the mixture all at once to the pan and flatten out into a large cake. Flip
the cake when it starts getting brown underneath and continue to fry for
about 3 to 5minutes per side. Cover to cook through until well done but
still soft, after the matzo brie flip. Serve immediately, with brown sugar
and cinnamon sprinkled toppings.
