Recipe - Matzo-Meal Latkes

One half cup MATZO MEAL
Three fourths cup COLD WATER
Three fourths teaspoon SALT
3 EGGS
1 tablespoon SUGAR
Combine matzo meal, salt and sugar. Separate the eggs. Beat yolks slightly
and combine with the water. Add the liquid to the dry ingredients. Allow to
stand for 1520 minutes. Beat the egg whites until stiff. Fold them into
the matzomeal mixture. Drop by tablespoons onto a hot, wellgreased frying
pan or griddle and brown on both sides. Makes 1012 latkes. This recipe and
