One fourth cup Water
2 Cloves garlic, minced
One half cup Skim milk (or evaporated
skim milk for creamier
texture
1 tablespoon Fresh chives
Salt and fresh ground pepper
to taste
Combine potato, water and garlic in twoquart microwave safe casserole
dish. Cover and microwave on high 1113 minutes or until potatoes are
tender. Stir every 5 minutes. Mash potatoes until smooth. Add milk to
potatoes and beat on medium speed with mixer until smooth. Add chives and
stir.
