Recipe - Mary Anns Gumbo

5 tablespoon Oil
5 tablespoon Flour
2 Onions, minced
1 One half cup Celery, minced
1 Clove garlic, minced
1 lg Can tomatoes, minced
1 small Can tomato sauce
6 cup Water
3 teaspoon Salt
1 teaspoon Pepper
1 tablespoon Gumbo file (ground sassafras
leaves)
1 pound Frozen okra, cut in One half inch
slices
3 tablespoon Worcestershire sauce
Cayenne pepper, to taste
CHOOSE TWO MEATS
1 pound Shrimp, boiled and peeled
1 pound Crabmeat (do NOT use
imitation stuff)
1 pt Oysters
2 cup Ham, chopped
2 cup Sausage, cooked, cut or sliced up and
drained
Brown flour in oil until golden or darker. Add onions, celery and garlic
and simmer for five minutes, stirring constantly. (Might need to add a
little water.) Add tomatoes, tomato sauce, water, salt, pepper, file, okra,
worcestershire, cayenne and meats. Be careful with cayenne. It can become
hot in a hurry! Simmer for several hours. Serve in soup bowls over steamed
rice.
