Ingredients:

Eggs
Gum arabic
Water
Orange extract or vanilla

Beat the whites of 2 eggs. Dissolve 50 g (2 oz) gum arabic in 150 ml (1/4
pt) water then strain it. Put mix in clean pan with 1.5 teaspoons of
sugar. Heat and stir continuously until sugar is dissolved. Boil until the
mix becomes rubbery. (Put a drop in to cold water and see if it forms a
rubbery lump.) Add orange extract or vanilla or other sweet flavour. Work
in the egg whites. Drop spoonfulls of the mix on tray coated with
cornflower. Dust with cornflower. Leave to cool and set overnight. Taste
them next day. If they taste good, post them to Peter Moulding, Sydney,
Australia.
