2 Hen's Eggs (I used Medium)
2 tablespoon White Sugar
3 cup Flour (She means
AllPurpose)
1 cup Sweet Milk (I recommend
Whole, or even
HalfandHalf)
1 teaspoon Soda
2 teaspoon Cream of Tartar
2 tablespoon Melted Butter (She called
for "A lump the size of a
small hen's egg")
Cream the eggs, and sugar. Slowly add the remaining ingredients in the
order listed. She says bake them in a "Quickish" oven (That's about 400
degrees) for One half an hour, until they are springy. Use a square or round
baking tin, and serve them hot, with butter, topped with cinnamonsugar.
