3 Bell peppers; preferably a
mix of colors, roasted
3 tablespoon Olive oil
1 One half tablespoon Balsamic vinegar
1 tablespoon Orange Juice
One half teaspoon Grated orange rind
One fourth teaspoon Dried basil
One fourth teaspoon Salt
1/8 teaspoon Dried thyme
Freshly ground pepper; to
taste
Leaf lettuce
1. Cut the roasted peppers into 1/2inch wide strips. Place in a small
mixing bowl; Set aside.
2. Mix the remaining ingredients. Pour over peppers. Serve on leaf lettuce.
