Recipe - Maple Cornmeal Muffins

1 One half cup Self rising flour
One half cup Yellow cornmeal
1 Egg; beaten
1 cup Milk
One fourth cup Cooking oil
One fourth cup Maple syrup
Stir together flour and cornmeal. Make a well in center. Combine egg, milk,
oil and syrup; add all at once to dry ingredients. Stir just until
moistened. Grease muffin cups; fill 2/3 full. Bake in 400~ oven for 2025
minutes. Serve warm. Makes 16 muffins.
