Recipe - Maple Apple Muffins

Ingredients:

2 Eggs, beaten
One half cup Margarine becel light, or
butter
1 cup Maple syrup, 100% Pure
1 One half cup Apples, peeled, minced
3 cup Flour
1 tablespoon Baking powder
1 teaspoon Salt
1 teaspoon Cinnamon
1 teaspoon Nutmeg

Preheat oven to 350. Cream eggs and margarine in a bowl until light and
fluffy. Add Maple Syrup and apples. Mix well. Sift in dry ingredients. Stir
until moistened. Put into greased muffin tins. Bake 20 to 25 minutes.

NOTES : Original recipe says it will make 12 medium muffins I made 16.
The batter is very thick. The eggs and margarine really don't go "light and
fluffy".
