Recipe - Maple-Glazed Smoked Pork

1 tablespoon Unsalted butter
2 tablespoon Pure maple syrup
1 teaspoon Dijon mustard
1/8 teaspoon Ground red pepper
2 teaspoon Bourbon; if desired
8 ounce (4 slices) boneless smoked
pork chops
Cooking time: 5 minutes Preparation time: 5 minutes
Many supermarkets now carry smoked boneless pork chops. Thinly cut or sliced up and
readytoeat, they are delicious and highly versatile. Here, the subtly
smoked pork comes to the breakfast table as a lean alternative to bacon. If
you can't find the smoked pork chops, Canadian bacon may be used instead.
1. Melt butter in 10inch nonstick skillet over mediumhigh heat. Add
maple syrup, mustard and red pepper. Mix well and cook several seconds
until bubbly. Add bourbon, if using.
2. Add pork slices. Cook, turning several times, until edges of meat are
deeply glazed, 4 to 5 minutes.
