Recipe - Maple-Cinnamon Cake

Ingredients:

Nonstick vegetable oil spray
One half cup Unsweetened applesauce
One half cup Pure maple syrup
One fourth cup Vegetable oil
1 lg Egg
1 teaspoon Vanilla extract
1 One half cup Cake flour
One half cup (packed) golden brown sugar
1 teaspoon Baking powder
One half teaspoon Ground cinnamon
One fourth teaspoon Baking soda
One fourth teaspoon Salt

Maple syrup, brown sugar and cinnamon enhance this easytomake cake.

Preheat oven to 400°F. Spray 8 x 8 x 2inch baking pan with vegetable oil
spray. Whisk applesauce, syrup, oil, egg and vanilla in large bowl until
blended. Sift flour, brown sugar, baking powder, cinnamon, baking soda and
salt into applesauce mixture. Stir to blend. Transfer batter to prepared
pan. Bake cake until edges pull away from sides of pan and tester inserted
into center comes out clean, about 28 minutes. Transfer pan to rack and
cool cake completely. Cut into 12 pieces and serve.

Serves 12.

Per serving: calories, 169; total fat, 6 g; saturated fat, 1 g;
cholesterol, 27 mg.
