Recipe - Many Mushrooms Soup

3 tablespoon Butter
3 tablespoon Oil
1 Clove garlic; minced
1 Onion; chopped
1 pound Mixed mushrooms; (oyster,
morels, porcini, enoki,
brown or common your choi
3 cup Chicken broth
One fourth cup White port
2 tablespoon Tomato paste
One half cup Parsley, minced
Pepper, to taste
Melt butter and oil in large saucepan. Saute garlic
and onion slowly over low heat, 10 minutes. Add cut or sliced up
mushrooms, cover and cook over medium heat for 5
minutes. Add broth, port and tomato paste. Simmer 10
minutes. Add parsley and freshly ground pepper. Serve.
