Recipe - Mango Flummery

2 lg Mangos peel, slice
2 tablespoon Lemon Juice
1 cup Orange Juice
2/3 cup Sugar or substitute
1/3 cup Tapioca
Quick Cooking Kind
One half tablespoon Orange Peel grated
Banana Slices optional
In a blender or food processor, whirl mangos until pureed; you should have
3 C.
Transfer puree to a 3 qt pan. Stir in lemon juice, orange juice, sugar,
and tapioca. Let stand for 5 min.; then bring to a full boil over medhigh
heat, stirring constantly. Remove from heat; stir in orange peel. Let cool
for 15 min.; cover and refrigerate until softly set (about 2 hrs).
To serve, spoon flummery into 4 6 servings. NOTES
