Recipe - Mandarin Salad

1 Head red leaf lettuce
1 bn Fresh spinach
1/3 cup Chopped green onion
One half cup Chopped celery
One fourth cup Chopped parsley
1 11oz can mandarin oranges
Slivered almonds, chopped
walnuts, pinenuts, if
desired (one)
DRESSING
One half cup Olive oil
One fourth cup Tarragon vinegar
2 tablespoon Sugar
One half teaspoon Worcestershire
1 teaspoon Salt
Freshly ground pepper to
taste
Here's a nice little salad (I believe it's from the Private Collection
cookbooks done by the Jr. League of Palo Alto, CA) that my sister served on
New Year's Eve a few years back and which has always been well received
when I have made it.
Wash lettuce and tear (don't use knife to avoid browning) into bitesized
pieces. Wash spinach and trim stems. Combine with ingredients through
mandarin oranges. Just before serving toss with dressing and garnish with
one of the above nuts, if desired.
Dressing: Whisk ingredients together.
