Recipe - Mamma Mia Minestrone

1 tablespoon Minced garlic
3 tablespoon Olive oil
2 small Onion
1 Stalk celery
1 md Zucchini
1 Carrot, peeled
1 cup Mushroom
3 Diced tomato
3 tablespoon Tomato paste
7 cup Chicken stock, or vegetable
1 teaspoon Freshly ground black pepper
1 cup Macaroni, cooked
1 cup Chickpeas, drained
1 cup Italian green beans, snipped
One half cup Shredded cabbage
2 tablespoon Chopped basil, fresh
Parmesan cheese
Croutons
In a 5 quart pot, sautŽ the garlic in the olive oil for 10 minutes.
Add the onions, celery, zucchini, carrot, and mushrooms simmer covered for
30 minutes.
Add the macaroni, chickpeas, Italian green beans, cabbage, and basil simmer
covered for another 30 minutes.
To serve sprinkle bowl with Parmesan cheese and ladle soup over. Top with
toasted croutons.
