Recipe - Mai Tai Compote

1 md Dole fresh pineapple
1 Orange; peeled and cut or sliced up
1 Kiwi fruit; peeled and
cut or sliced up
1 cup Strawberries; halved
One half cup Seedless red grapes
One fourth cup Fresh lime juice
3 tablespoon Honey
1 tablespoon Light rum
1 tablespoon Orange flavored liqueur
One half teaspoon Grated lime peel
1 Firm Dole banana
Cut pineapple lengthwise through crown. Remove fruit with curved knife,
leaving shells intact. Trim off core and cut fruit into chunks.
In large bowl, combine pineapple, orange, kiwi, strawberries and grapes.
To make dressing, in a 1quart measure, combine remaining ingredients,
except banana. Pour dressing over fruit. Toss gently to coat. Refrigerate,
covered, 1 hour. ( I think it needs a little longer to set, to let the
flavors mingle better ). Just before serving, slice banana into fruit
salad. Toss gently. Spoon salad into pineapple shells and serve.
Makes 6 8 servings.
NOTES : This is very good. The first time I made this it was for a Hawaiian
Theme Party I was going to, I made a mistake by tasting it right after
making it... before the flavors mingled and I didn't think it tasted that
great, ( I think I was tasting too much of the liqueurs) and almost didn't
bring it to the party, but after a while I tasted it again and it was
wonderful.
