Recipe - Mahi Mahi With Spicy Papaya Salsa

FISH
2 Mahi Mahi, steaks OR
Fish, steaks, firm fleshed
Salt (to taste)
Pepper, white (to taste)
SALSA
2 teaspoon Sauce, plum
1 teaspoon Sauce, soy
One fourth cup Asian pear, chopped
minced
1 teaspoon Cilantro
1 teaspoon Jalapeno OR
1 teaspoon Serrano
1 tablespoon Onion, purple
1 tablespoon Juice, lemon
1 teaspoon Honey OR
1 teaspoon Sugar
1 tablespoon Pepper, red, minced
GARNISHES
Papaya, cut or sliced up into a
fan shape for garnish
Kiwi, peeled, cut or sliced up into
coins for a garnish
Mahi Mahi: ==========
Season the fish with a little salt and white pepper. Grill quickly on
a nonstick surface. The fish is done when it turns opaque throughout and
flakes to a fork.
Salsa: ======
Mix all of the ingredients together and adjust the flavor with honey,
or brown sugar.
Arrange the fan of papaya and the kiwi coins on a plate. Add a piece
of the grilled fish, then spoon a serving of the salsa next to the fish.
