Recipe - Magic Muffins

1 One fourth cup Allpurpose flour
Three fourths cup MaltOMeal Quick hot
cereal; dry
One half cup Sugar
Three fourths cup Milk
One fourth cup Vegetable oil
1 Egg
1 tablespoon Baking powder
One half teaspoon Salt
Heat oven to 400°F. In a large bowl, combine all ingredients; stir together
until ingredients are just moistened. Spoon into greased or paperlined
12cup muffin pans filling cups Three fourths full. Bake for 18 to 20 minutes or
until toothpick inserted in center comes out clean.
Yield: 12 muffins.
Variations:
MaltOMeal Maple & Brown Sugar Flavor or Apple & Cinnamon Flavor may be
substituted for MaltOMeal Quick hot cereal. Tip: For moister muffin add
One half cup applesauce.
STREUSEL: Combine 2 tablespoons of sugar, 1 tablespoon MaltOMeal Quick
hot cereal, dry, One fourth teaspoon cinnamon and One fourth teaspoon nutmeg. Sprinkle
mixture on muffins. Bake as directed above.
BLUEBERRY: Add One half cup blueberries to batter.
COCONUT: Add One half cup coconut to batter.
CORN BREAD: Add 1 can (8.5 ounce) cream style corn to batter. Pour into
greased, 13x9inch pan and bake for 18 to 20 minutes.
POPPY SEED: Add 1 tablespoon poppy seed to batter.
BANANA: Add Three fourths cup mashed banana to batter.
