Three fourths cup Unsalted butter
1/3 cup Honey
2 Eggs
One fourth cup Sugar
1/8 teaspoon Allspice
One half teaspoon Grated orange zest
One half teaspoon Vanilla extract
1 cup Allpurpose flour

Brush madeleine pan with butter and dust with flour. In large bowl,
combine eggs, honey, sugar, orange zest and allspice. Set over saucepan of
simmering water and stir until lukewarm. Remove and beat until pale yellow
and triped in volume, which is about 10 minutes. Add vanilla; reduce speed
and gradually mix flour in. Transfer 1/3 batter to another bowl and add
melted butter. Return to original bowl and mix gently. Spoon into molds
almost to the top. Bake in preheated oven 400 degrees until golden, which
is about 12 minutes. Remove and cool on rack. Sprinkle with Confectioner's
sugar. Sleepless
