Recipe - Macaroni Grills Bellini

1 ounce Peach schnapps; (2
tablespoons)
1 ounce Rum; (2 tablespoons)
6 ounce White wine; ( Three fourths cup)
6 ounce Champagne; ( Three fourths cup)
8 ounce Peach nectar or peach
juice*; (1 cup)
2 teaspoon Powdered sugar
2 cup Crushed ice
2 ounce Blueberry or
raspberryinfused vodka**;
(4 tablespoons)

Place the schnapps, rum, white wine, Three fourths cup water, champagne, peach nectar
and powdered sugar in a heavy duty blender and pulse to mix. Add 2 cups of
crushed ice and process until ice is finely ground (do not add more ice;
mixture will be more liquid than frozen at this point). Pour into shallow
plastic or stainless steel container. Place in the freezer for 2 to 3
hours, stirring once every hour. Serve with optional infused vodka swirled
in.

*Select a pure peach juice, not a blend. **To infuse vodka: Pour One half cup
vodka over One fourth cup frozen blueberries or raspberries, let rest at room
temperature 2 to 3 hours, then drain vodka and use, discarding fruit.

: This frozen drink is very flexible and can be served plain or swirled
with blueberry or raspberryinfused vodka. Macaroni Grill makes Bellinis
in an oldfashioned frozen drink machine. But you can use a blender and
crushed ice. As with drinking all alcoholic beverages, enjoy them in
moderation and always have a designated driver if you plan to be on the
road later.
