Recipe - Luscious Lemon Cake

LEMON CAKE
4 ounce Soft butter; (One half stick)
6 ounce Caster sugar; (7/8 c
superfine)
6 ounce Selfrising flour; (1 3/8
cup)
4 tablespoon Milk
2 lg Eggs
1 Lemon; grated rind of
LEMON SYRUP
3 tablespoon Icing sugar; rounded
(powdered)
3 tablespoon Fresh lemon juice
Grease and line a 2 pound loaf tim. Set oven to 350 degrees F or Mark 4.
Cream butter and sugar, add eggs, sifted flour, finely grated lemon rind
and milk. Mix well to a soft dropping consistency. Put in tin, smooth top
and bake for 4050 minutes until firm. Mix sifted icing sugar and lemon
juice and pour over cake as soon as it comes out of the oven. Leave in tin
until completely cold.
