Recipe - Lunar Landing Salad

1 One half pound (4 medium) potatoes; cut
into 1/2inch dice
One half cup Sliced radishes
One half cup Diced cucumber
1/3 cup Sliced green onions
1 One half tablespoon Vegetable oil
2 tablespoon White wine vinegar
One half cup Blue cheese; crumbled
Salt; to taste
Black pepper;Coarsely
ground, to taste
Place potatoes in shallow 1 1/2quart microwavesafe dish, cover with
plastic wrap, venting one corner. Microwave on HIGH 8 to 10 minutes until
tender; coll slightly. In large bowl toss potatoes, radishes, cucumber,
onions and oil. Drizzle with vinegar
and cheese; toss again. Season with salt and pepper.
Makes 4 servings
Note: Microwave cooking times are based on a 700watt microwave. Adjust
cooking times to your own oven.
Nutritional Information per Serving: 242 calories; 10 g fat; 13 mg
cholesterol; 248 mg sodium; 32 g carbohydrate; 3 g fiber; 7 g protein.
