Recipe - Lubys Green Pea Salad

2 cn Green peas, about 16oz
cans; rinsed and drained
1 cup Cheddar cheese, 4 oz.;
finely minced
1 cup Celery; minced
One half cup Sweet pickles; thinly cut or sliced up
One half cup Red bell pepper or pimiento;
minced
One half cup Mayonnaise
Salt; to taste
Freshly ground black pepper;
to taste
Combine peas, cheese, celery, pickles, bell pepper, mayonnaise, salt and
pepper in mediumsize bowl. Toss lightly to coat evenly. Cover and
refrigerate at least 2 hours.
