Recipe - Low-Fat Chicken-Rice Casserole

1/3 cup AllPurpose Flour
1 One half teaspoon Salt
1/8 teaspoon Pepper
1 cup Nonfat chicken broth
1 One half cup Skim milk
1 One half cup Cooked Rice; White or Wild
2 cup Chicken breasts without
skin; cooked
4 ounce Mushrooms
1/3 cup Chopped green bell pepper
Heat oven to 350 degrees F. In large saucepan, blend flour, salt and
pepper. Stir in broth and milk. Stirring constantly, cook over low heat,
until mixture is smooth and bubbly. Bring to boil and stir 1 minute. Stir
in remaining ingredients.
Pour into ungreased baking dish (10x6x1.5"), or 1 1/2quart casserole.
Bake uncovered 40 to 45 minutes. Sprinkle with snipped parsley.
