Recipe - Lo Mein Stir-Fried Vegetable Mixture

10 Dried black mushrooms
1 pound Spinach
1 cup Bamboo shoots
2 (up to)
3 tablespoon Oil
One half teaspoon Salt
1 (up to)
2 tablespoon Soy sauce
1. Soak dried mushrooms.
2. Cut spinach leaves in two. Slice bamboo shoots and soaked mushrooms.
3. Heat oil. Add mushrooms and bamboo shoots; stirfry 3 minutes.
4. Add spinach, salt and soy sauce; stirfry 1 minute more. Combine mixture
with softfried or tossed noodles, as indicated in main recipe. VARIATION:
Reduce spinach to One half pound. In step 3, add One half cup preserved cabbage,
rinsed and shredded.
