To 5 pounds coarsely ground pork butts add 1 heaping tsp. pulverized
whole mustard seeds, 1 heaping tsp. whole allspice & One half tsp. whole
black peppercorns. Add One half large onion & 1 large clove garlic,
finely minced; One fourth cup salt; & One half cup water. Mix thoroughly, & stuff
into casings. Poach or boil for 20 minutes.
