Recipe - Light N Fruity Pie

3 ounce Strawberry gelatin powder;
or any flavor
2/3 cup Boiling water
2 cup Ice cubes
8 ounce Cool Whip®; thawed
1 cup Fresh strawberries; cut or sliced up
(or cut or sliced up peaches,
bananas, or whole
raspberries or blueberries)
1 pack Graham cracker pie crust; 9
inch
OPTIONAL
8 Three fourths ounce Canned peaches (1 can)
apricots; or fruit
cocktail, drained
8 One fourth ounce Crushed pineapple
Dissolve gelatin completely in boiling water, stirring about 3 minutes. Add
ice cubes and stir until gelatin is thickened, about 2 to 3 minutes. Remove
any unmelted ice.
Blend in Cool Whip, then whip until smooth.
Fold in fruit. Chill, if necessary, until mixture will mound. Spoon into
crust. Chill 2 hours. Garnish if desired.
