Recipe - Light Fruitcake

One fourth cup Margarine, softened
One half cup Granulated sugar
One half teaspoon Cinnamon
2 cup Allpurpose flour
1 cup Sour skim milk, (1 tbp vin.
+ milk)
1 teaspoon Baking soda
1 teaspoon Water
One half cup Candied cherries, halved
One half cup Raisins
Cream margarine, sugar and cinnamon together. Add flour in 3 parts
alternately with sour milk in 2 parts beginning and ending with flour.
Mix baking soda with water. Add. Stir.
Add cherries and raisins. Mix. Turn into 9 X 9 inch (22X22 cm) cake pan
that has been sprayed with nostick cooking spray. Bake in 375 dgree
farenheit oven for about 30 minutes until an inserted wooden toothpick
comes out clean. Cut into 20 pieces.
NOTES : Per Serving: 107.7 Calories; 2.4g Fat (20.1% calories from fat);
1.9g Protein;19.9g Carbohydrate;0mg Cholesterol; 100mg Sodium.
