Recipe - Lemon Vegetable Fish Supreme

Ingredients:

1 pound Frozen cod, sole or other
white fish
Juice of One half lemon
1 md Tomato, minced
1 cup Shredded unpeeled zucchini
Grated peel of One half lemon
1/8 teaspoon Salt
Few dashes tarragon
1 ds Each basil, pepper and thyme
1 tablespoon Butter (opt.)

With serrated knife, cut frozen fish into 4 serving size pieces. Arrange in
Pam sprayed 8" square baking dish. Sprinkle with lemon juice. Cover with
foil. Bake at 450 F. for 25 minutes or cover with plastic and Microwave on
High for 67 minutes. Meanwhile combine tomato, zucchini, lemon peel and
seasonings. Spoon over fish. Can dot with butter. Bake, covered for 810
minutes longer or Microwave for 5 mins. more. MC formatting and posted on
