Recipe - Lemon Spice

One fourth cup Molasses
One fourth cup Water hot
1 Egg white whipped
2 tablespoon Applesauce at room
Temperature
1 cup Unbleached flour
2 tablespoon Brown sugar packed
One half teaspoon Baking soda
One half teaspoon Ginger
One half teaspoon Cinnamon
1/8 teaspoon Salt
Sauce
3 tablespoon Granulated sugar
1 tablespoon Cornstarch
1 cup Water
1 tablespoon Lemon peel grated
1 tablespoon Lemon juice
Preheat oven at 350. Prepare a pan(s) with cooking spray and flour. In a
mixing bowl combine molasses, water, egg white, and applesauce. In another
mixing bowl, combine flour, sugar, baking soda, ginger, cinnamon, and salt.
Pour mixture into prepared pan. Bake for 30 to 35 minutes. Meanwhile, to
prepare sauce, mix sugar and cornstarch in 1 quart saucepan. Gradually stir
in water. Cook over medium heat, stirring constantly, until mixture
thickens and boils. Boil and stir 1 minute; remove from heat. Stir in
lemon peel and lemon juice. Serve over gingerbread.
