Recipe - Lemon Poppyseed Muffins

Ingredients:

1 One fourth cup Allpurpose flour
2/3 cup Granulated sugar
1 tablespoon Baking powder
One half teaspoon Baking soda
One fourth teaspoon Salt
2 cup Kellogg's® AllBran® cereal
1 One fourth cup Skim milk
1 Egg
3 tablespoon Vegetable oil
2 tablespoon Poppy seeds
2 teaspoon Grated lemon peel
1 tablespoon Lemon juice
Vegetable cooking spray

LEMON GLAZE
One half cup Powdered sugar
2 One half teaspoon Lemon juice

1.Stir together flour, granulated sugar, baking powder, soda and salt. Set
aside.

2.In large bowl, combine Kellogg's® AllBran® cereal and milk. Let stand
about 5 minutes or until cereal softens. Add egg and oil. Beat well. Stir
in poppy seeds, lemon peel and lemon juice. Add flour miture, stirring only
until combined. Portion evenly into twelve 2 1/2inch muffinpan cups
coated with cooking spray.

3.Bake at 400°F about 20 minutes or until lightly browned. Remove from pan.
To make glaze, combine powdered sugar and lemon juice until smooth. Drizzle
glaze over warm muffins. Serve warm.
