Recipe - Lemon Cream Scones

1 Lemon ; rind of
2 cup Flour
One fourth cup Sugar
2 teaspoon Baking powder
1/3 cup Butter
One half cup Heavy cream
1 Egg
1 One half teaspoon Vanilla
Stir together flour, sugar, baking powder and rind.
Cut in butter until resembles coarse crumbs. In small bowl, mix cream,
eggs, and vanilla.
Add to flour mixture. Knead the dough (it will be sticky).
Pat dough into One half inch thickness. Cut with small round glass. Place on
cookie sheet sprayed with a nonstick spray.
Bake in a 400°F oven for 1015 minutes.
NOTE: I think One half inch is too thin. Next time I make them, I'll use a glass
and make them at least 1One half inches thick. ALSO, I added One half teaspoon lemon
flavoring (real, not imitation!)
