Recipe - Lemon Cheese Buns

Ingredients:

DOUGH
1 cup Water
One fourth cup Sugar
1 lg Egg, well beaten
2 tablespoon Butter
Three fourths teaspoon Salt
4 cup Bread flour
1 tablespoon Dry milk
1 One half teaspoon Active dry yeast

FILLING
1 cup Ricotta cheese, part skim
milk
One fourth cup Lemon juice, 1 lemon
One fourth cup Sugar
One fourth teaspoon Lemon zest, 1 lemon

TOPPING
One half cup Confectioner's sugar
1 teaspoon Lemon juice
Water

ButterRich Roll & Bread Dough: (Zojirushi) 1. Measure ingredients into
baking pan except yeast. 2. Tap container firmly to level ingredients, then
sprinkle yeast in the center of the flour. 3. Insert baking pan securely
into baking unit and close lid. 4. Select DOUGH setting and push Start. 5.
The machine will beep and COMPLETE light will illuminate when dough is
finished. 6. Remove dough from baking pan. 7. Roll dough out into 12x15
inch square. Spread evenly with filling. Roll lengthwise and cut roll into
12 pieces. Place in buttered pan, cut side down. 8. Cover dough, let stand
15 minutes. 10. Bake at 375F for 15 to 20 minutes. Cool in on baking rack.
Spoon topping over buns. Filling: (Donna) Combine all filling ingredients
and stir to mix thoroughly. Topping: (Donna) Combine all topping
ingredients. Add water by One half teaspoonfuls until consistency correct to
spoon over buns.

Per serving: 271 Calories; 5g Fat (16% calories from fat); 9g Protein; 48g
Carbohydrate; 27mg Cholesterol; 186mg Sodium

NOTES : On Bloor Street in Toronto, Canada, they sell wonderful sweet buns
with a cheese filling. I've never been able to find a name or a recipe for
these buns, this recipe is quite different but very good. I love ricotta
cheese and I love lemons. Combining them seemed like a good idea!
