Recipe - Lemon Buns

2 ounce Caster sugar
5 tablespoon Lukewarm milk
2 teaspoon Dried yeast
8 ounce Strong plain flour
Salt
Grated rind of 2lemons
1 Egg
1 Egg yolk
2 ounce Butter
Dissolve One half teasp of the sugar in the milk and sprinkle the yeast on top.
Leave in a warm place for 15 min till frothy. Sift the flour and a pinch of
salt into a bowl and stir in the remaining sugar and lemon rind. Add the
yeast mixture, beaten egg and yolk and melted butter and mix to a stiff
dough. Divide between greased 12hole bun tray. Cover with oiled polythene
and leave to rise in a warm place till doubled in size. Preheat the oven to
375F. Bake the buns for about 25 min till well risen. Cool on a wire rack.
