Recipe - Lemon-Braised Spinach

Ingredients:

1 pack (16oz) frozen chopped
spinach
One fourth cup Vegetable broth
1 lg Red onion; minced
5 Cloves garlic; minced
1 lg Lemon; juice of, or 2
tablespoons lemon juice
Salt and pepper to taste

It's slightly adapted from Vegetarian Times Vegetarian Entertaining.

Saute onion and garlic in vegetable broth until soft, about 45 minutes.
Add spinach, lemon juice, salt and pepper and cookk over medium heat until
the spinach is thawed and heated through, about 10 minutes. Serves 24. (My
husband and I ate the whole thingyum!)
