Recipe - Lean Refried Beans

2 teaspoon Oil, vegetable
1/3 cup Onions finely chopped
1 teaspoon Garlic minced
One half teaspoon Cumin
1/8 teaspoon Pepper, red ground
15 ounce Pinto beans drained and
One fourth cup ;water warm 2 teaspoons Juice, lemon =or= lime
~PER SERVING *cals *gm protein *gm fat *gm carbo *mg sodium
Heat oil in medium saucepan over medium heat. Add onion and cook until
translucent, 3 minutes. Stir in garlic, cumin and red pepper; cook 30
seconds. Add beans and cook 1 minute mroe; mashing beans with spoon. Stir
in water, cook until water is absorbed. Remove from heat and stir in lemon
juice. Prep Time: 5 mintues. Cooking Time: 5 minutes
