Recipe - Layered Spinach Bake

Ingredients:

1 pound Turkey breast; ground
10 ounce Frozen spinach; chopped,
drained
1 tablespoon Dried onions
1/8 teaspoon Garlic powder
15 One half ounce Spaghetti sauce; Healthy
Choice
One fourth cup Seasoned bread crumbs;
divided
1 cup Cottage cheese; fatfree
One fourth cup Egg Beaters® 99% egg
substitute
1/8 teaspoon Pepper
3 ounce Mozzarella cheese; part skim
milk, shredded
2 tablespoon Parmesan cheese; fatfree,
grated

Microwave spinach covered 46 min. on high. Drain, pressing to remove
excess mosture. Chop and set aside.

Combine ground turkey, onion, and garlic powder. Cook until no longer pink.
Drain. Stir in spagetti sauce. Cover, microwave on high 24 min. until
bubbly. Stir in 2 tablespoons of bread crumbs. Set aside.

In medium bowl, combine spinach, remaining 2 tablespoons bread crumbs,
cottage cheese, egg and pepper.

Spread half of meat mixture in bottom of 9inch square microwave safe dish.
Top with spinach mixture, sprinkle with mozzarella cheese. Top with
remaining meat mixture. Sprinkle with parmesan cheese.

Microwave on high for 3 min. Microwave on 50% power for 812 min. more
until hot. Let stand for 5 min.

NOTES : Amount of mozz. cheese can be reduced without hurting recipe.
Freezes well. Have tried other spaghetti sauce but some of them tend to be
a little runnier...add more bread crumbs to compensate.
