Recipe - Lamb Shoulder Cushion Roast With Stuffing

4 pound Shoulder of lamb, square cut
2 tablespoon Onion, chopped
One half cup Celery, chopped
2 tablespoon Butter
1 teaspoon Salt
One fourth teaspoon Ginger, ground
2 tablespoon Brown sugar
1 tablespoon Mint flakes *1
2 cup Apples, chopped unpeeled
1 cup Bread crumbs, One fourth "
One fourth cup Milk
*1 2 tbs. fresh chopped mint
Debone roast to form a pocket. Saute onion and celery in butter. Add
remaining ingredients and toss lightly.
Fill cavity with stuffing, skewer or sew edges together.
Place, fat side up, on rack in shallow pan. Roast uncovered in 325 F. oven
about 2 One half hours or 30 to 35 minutes per pound.
