Recipe - Kiwi Fruit And Shrimp Saute

3 Kiwi fruits
2 (up to)
3 tablespoon Olive oil
1 pound Shrimp; peeled
3 tablespoon Flour
Three fourths cup Prosciutto or thinly cut or sliced up
sandwich ham; cut into thin
strips
3 Shallots; finely chopped
One fourth (up to)
1/3 teaspoon Chili powder
Three fourths cup Dry white wine
Peel kiwi. Reserve 4 slices for garnish and chop remaining fruit. In a
heavy skillet or wok, heat oil. Toss shrimp in flour and saut‚ 30 seconds.
Add Prosciutto, shallots and chili powder. Saut‚ another 30 seconds. Add
the chopped kiwi and saut‚ 30 seconds. Add wine and reduce by half . Serve
immediately. Yield: 4 servings.
