Recipe - Kitfo (Steak Tartare)

One fourth cup Niter kebbeh
One half cup Onions chopped fine
4 teaspoon Green pepper chopped
Fine
2 teaspoon Chiles chopped fine
1 teaspoon Ground ginger
One half teaspoon Garlic chopped fine
One half teaspoon Ground cardamom
1 teaspoon Lemon juice
2 teaspoon Berbere or awaze
2 teaspoon Salt
2 pound Ground round steak
In a large skillet, melt the niter kebbeh over low heat. Add onions, green
pepper, chiles, ginger, garlic, and cardamom. Raise heat to med. and cook
2 min., stirring constantly. Place mixture in a bowl and cool for 15 min.
Stir in lemon juice, berbere and salt. Stir in raw beef and mix
thoroughly. Serve with injera, breads, or crackers. Kitfo can also be
stuffed in split Italian frying peppers and served in this fashion.
